What Do I Really Eat Every Day?

I recently wrote a post about living a healthy lifestyle and how to get started. If you’re anything like me you’ve struggled with finding the right balance. Something you can make a lifestyle out of. Growing up I could eat whatever the heck I wanted. I was doing gymnastics on a daily basis and I ate ice cream, pasta, cookies; you name it. If I wanted it I ate it. That was until the end of high school and the beginning of college. Everything started to change. I started gaining weight. So I tried running on the treadmill for hours. I’d starve myself only to end up binging on a bunch of crap. It was vicious cycle and I started resenting food and fitness. I’d eat healthy for a few days, torture myself in the gym and leave unhappy and unsatisfied. My idea of “healthy” wasn’t actually that healthy. I ate salads containing mostly lettuce and I usually didn’t have enough energy to lift weight at the gym. I’d just do a bunch of running and take a few spin classes. It wasn’t fun. So I’d go out drinking with my friends and binge on a bunch of junk food only to disappoint myself and start all over. I suppose you could call it a vicious cycle of “yo-yo” dieting.

Probiotics are important. I know that. But why are they important? And why have I not been so focused on including them in my diet? Last week I received a copy of The Performance Paleo Cookbook by Stephanie from Stupid Easy Paleo. On my first look through the book I stumbled upon her Blackened Fish Tacos with Mango Slaw and immediately got out my shopping list to write down the ingredients I needed. Happy Holidays! Life has been a bit hectic lately, but I know that's typical this time of year. Balancing work, training, holiday parties, family gatherings, travel and a few competitions has kept me on my toes, but I've had a blast doing it all. Last week I was in Washington DC competing at the American Open for weightlifting and what an incredible experience its was. MINI BREAKFAST TARTS

What a relaxing weekend. I'd been so busy with competitions and different events that I hadn't had a chance to just settle down and relax. I'll admit I'm not very good at that. I kept trying to find things to do and places to go, but I did chill out a little bit. Saturday I got to train with two of my favorite girls, Sara and Rose. We did some conditioning then enjoyed a nice lunch outside on the patio at Porters in Lodi. It's still 80 degrees here in California so I'm taking full advantage of it as long as possible. Winter and I aren't really friends. Then on Sunday I woke up and made these incredibly delicious breakfast tarts before heading up to Sacramento to watch some of my friends compete at the Women's Pro-Am Powerlifting competition. It was awesome! Maybe one of these days I'll sign up to compete at one. I need to suck less at deadlifting first though.

Happy Halloween! I hope everyone has some fun plans for the weekend. I'll be going to a costume party tomorrow evening then lifting at my second weightlifting competition Sunday afternoon. It should be a busy fun filled time. I've been trying to think of some delicious treats to bring to the party and decided to bust out my mini tart pan. This spiralled into several different recipe ideas and I ended up spending the entire day making a variety of mini tarts. It was fun and tasty. This was one of my favorites and it's the perfect dessert/appetizer to take or put out at your party this weekend or anytime during the holiday season. I'm just about to head out for a competition in Reno this weekend. It will be my first individual competition which is nerve racking but also quite exciting! But before I do I had to share this recipe with you. I stumbled upon Real Food By Dad this week and boy does he make some incredible dishes! They aren't paleo, but his photographs are mouth watering. One of his posts is a series of stuffed baked potatoes and I decided to make something quite similar with a sweet potato. This will certainly be my new go to brunch. It's delicious and filling and perfect for a Sunday morning.

This recipe came about in somewhat of an odd manner. I've recently moved back to my home town and I got invited to a barbecue with some friends I hadn't seen in a while. CrossFitters who love to eat none the less. I went out to the garden to pick some zucchini but I knew I needed to bring a paleo treat along. That's how they know me! I had a very short amount of time to whip something up and very few ingredients in my house but I threw a few things in a bowl and these delicious creations came about. Now every time we have a barbecue they ask me where the chocolate chip cookies are! I've created a bit of an addiction.
