Happy Holidays! Life has been a bit hectic lately, but I know that's typical this time of year. Balancing work, training, holiday parties, family gatherings, travel and a few competitions has kept me on my toes, but I've had a blast doing it all. Last week I was in Washington DC competing at the American Open for weightlifting and what an incredible experience its was. We spent five days lifting weights, sight seeing, bumping into friends and I even had the pleasure of attending a Paleo Cookie Swap hosted by Paleo Parents at their home in Virginia.

I'm really excited to share this recipe and guest post from Bob, the blogger and owner of Not So Fast Food. He's got some incredible recipes, but he was generous enough to share this epic one with me. He also has a Paleo food truck, which is pretty awesome. I combined two of everyone's favorites! BACON & Chocolate Chip Cookies. The craze of the past few years has been the combination of Bacon & Chocolate and I get why! It's FREAKING delicious!!!!!! One dilemma I have on my Primal lifestyle is my sweet tooth.....I absolutely love chocolate. Gummi Bears are my other kryptonite, but, I don't have them very often anymore. Chocolate though, I can't get enough of a delicious piece of dark chocolate, especially with Coconut. Better get ready for A LOT of Chocolate desserts on this Blog. The baking time for the cookies will depend on the size you make them. I aim for a good sized tablespoon of dough!

CHOCOLATE CHIP CRANBERRY N'OATMEAL COOKIES

Well I've been on a bit of a cookie kick lately. Probably because I've made them for my teammates a few times now and they've started to expect them when I turn up for training. I also bribe Mark Bell with them so he'll teach me how to powerlift. It seems to be working. He helped me bench press 200lbs over the weekend and made a really nice video about my deadlift. I think he referred to my form as "a dog crapping on a front lawn" you can check it out here: Fixing Ashley Beaver's Deadlift. Other then that my life has been busy with work and training. I've been training at WarriorZ CrossFit in Elk Grove on their Caffeine and Kilos NorCal Regional team. It's been an amazing experience to say the least. The athletes I've had the pleasure of working with are experienced, knowledgeable and a lot of fun to be around. We push each other, coach one anther, and hang out when we're finished. I couldn't ask for a more supportive group of friends to be training with every day. I made these cookies for a BBQ we had last weekend. Considering the fact that they were gone in 2 seconds, I'm gonna say they were liked somewhat. So you'll probably want to make them. Enjoy and happy weekend!

Well it's November already! And although I'm not a huge fan (actually make that not a fan at all) of the cold weather, I do enjoy the holiday season and spending time with friends and family. There's something about the cold weather that brings everyone together. Maybe it's the common consensus that we should all be locked in the house with our heaters on, I don't know, but it's definitely a fun time to share food and gifts with the ones we care about. So of course when I think of November, I think of Thanksgiving, and then I think of stomach pain from all of the food I know I'm going to eat. But maybe, just maybe, if we had a few healthier options around, I wouldn't dread the upset so much. Yes, I will still stuff my face with too much food, but hopefully the aftermath will be slightly less painful. The first order of business? A paleo pumpkin pie!

I'm very excited to share this post with you because it's my first guest post! And the best part is, she's amazing. I mean, she makes noodles out of vegetables. How great is that? And all, I mean ALL, of her recipes are fantastic. The second best part about this recipe, well besides the fact that it's absolutely delicious, its extremely simple to make. If you've been following me for a while now, you know I'm a big fan of simple and quick recipes. We're all busy, I know that, but your health shouldn't have to go out the window because of it. If you have the right tools and resources eating healthy is easy. My suggestions? Experiment with recipes on the weekends and stock up on fresh meat and vegetables, meal prep on Monday, and keep your cabinet stocked with a variety of oils and spices. You'll always be prepared!

ROASTED VEGETABLE SALAD WITH CHICKEN

The idea for this salad came to me after having lunch with a friend at California Pizza Kitchen last week. I absolutely love their grilled veggie salad and for some reason I'd never thought about how simple it would be to make on my own. Especially since I could easily make a large batch at once to feed a group or to last me most of the week. So I ran to the grocery store and whipped one together. This will definitely be a staple at my house from now on. Another reason that I love this salad? It's insanely healthy. And when insanely healthy meets crazy delicious, I'm pretty much sold. I've set my sights on competing at the CrossFit Games one day and that means my training and diet need to be in check. My competitors eat, sleep and breath this sport, and if I plan on keeping up with them, I have to too. Sometimes my dreams scare me, but whats that saying? "If you're dreams don't scare you they aren't big enough." I think I read that somewhere. And I couldn't agree more. I've made a lot of sacrifices in my career and life for this, so I'll be damned if I don't give it my all. Plus, this is what makes me happy, and isn't that one of the most important things in life? Nothing's worth it if you aren't happy. What makes you happy? Well, besides this salad, because I've already assumed that. Enjoy!

COOKIE DOUGH BALLS

Sometimes I just want to eat cookie dough. Okay all the time. But sometimes I let myself have it. So I came up with these little balls as a form of portion control (not that I can actually say that stopped me from eating way too many) but I felt better about myself then if I had just spooned it out of the bowl right into my mouth. What else can I tell you about my life and eating habits? I've been keeping pretty busy since my last post. Working, training, oh and learning how to swim! Isn't that cool? I love it, well I suck at it, but it's a great workout and I'm getting a really nice tan while I'm doing it. So it's a win win right? Trust me if you knew how white I was you'd be happy too. My trainings been a bit off lately though. I think I need to set some goals. I miss having a coach telling me what to do (more like yelling at me to keep pushing) but I'm working on sorting that out. I know one thing for sure though, I want to compete and get better, but I also know I'm the type who needs the push from other athletes.

I felt the need to share this recipe because they're incredibly delicious. That's reason enough right? My mom got me hooked on these nut bars that she used to buy at the grocery store (yes I ate store bought bars) until I realized they weren't the best thing for me to be eating and I needed to find a healthier alternative. I tried to tell myself they were okay, they're gluten free, and just a bunch of nuts stuck together, how bad can it be? Until I read the nutrition label and it said they were glued together with Sugar, Corn Syrup, Yellow Corn Flour and Corn Oil. Eek! So I came across this recipe from Deliciously Organic and decided to give it a shot. They were so good I made a batch for a friend who was helping me with some wrist and back issues during the CrossFit Open, and she loved them so much she made them for her friend as well. So yes, they're awesome. And I'm assuming that's all the convincing you needed right? Good, because I have to get back to work now. Enjoy!
