PUMPKIN PECAN PIE TARTS

PUMPKIN PECAN PIE TARTS

Happy Halloween! I hope everyone has some fun plans for the weekend. I'll be going to a costume party tomorrow evening then lifting at my second weightlifting competition Sunday afternoon. It should be a busy fun filled time. I've been trying to think of some delicious treats to bring to the party and decided to bust out my mini tart pan. This spiralled into several different recipe ideas and I ended up spending the entire day making a variety of mini tarts. It was fun and tasty. This was one of my favorites and it's the perfect dessert/appetizer to take or put out at your party this weekend or anytime during the holiday season. I hope you enjoy them and have a safe and fun Halloween. Enjoy your treats.

Well it's November already! And although I'm not a huge fan (actually make that not a fan at all) of the cold weather, I do enjoy the holiday season and spending time with friends and family. There's something about the cold weather that brings everyone together. Maybe it's the common consensus that we should all be locked in the house with our heaters on, I don't know, but it's definitely a fun time to share food and gifts with the ones we care about. So of course when I think of November, I think of Thanksgiving, and then I think of stomach pain from all of the food I know I'm going to eat. But maybe, just maybe, if we had a few healthier options around, I wouldn't dread the upset so much. Yes, I will still stuff my face with too much food, but hopefully the aftermath will be slightly less painful. The first order of business? A paleo pumpkin pie!

Last night my friend Sarah invited me over for dinner to catch up. She made us a delicious zone paleo feast and I immediately had to share the meal with my blog! I asked if she could write up the recipe and maybe a bit of a "guest" post and this is what she sent me. I'm slightly embarrassed to post this, but I'm also extremely flattered. Sarah has been such a great friend since moving to Australia and I wish I could just toss her in my suitcase and take her back to California with me!

Happy Friday! Boy was I ready for the weekend. Or at least for the end of the work day so I could hit up crossfit. My sister asked me if I could send her a picture doing a one-handed handstand. She's made Friday her official one-handed handstand day on instagram so of course I was happy to participate. I wanted to go above and beyond though and do one on a kettlebell. Well that proved harder than expected! But I managed to get one on the parallet bar, which made me very happy until my coach did one on the kettlebell! Always one upping me. So of course I had to beat him in the WOD and I did just that, 419 reps over his 412 (you win some, you lose some) but as long as you win the majority of them!  I'm not competitive or anything. Haha. Tomorrow morning I'm going to do some more practice on the kettlebell handstand so I'll be sure to let you know how I go.
