Happy Holidays! Life has been a bit hectic lately, but I know that's typical this time of year. Balancing work, training, holiday parties, family gatherings, travel and a few competitions has kept me on my toes, but I've had a blast doing it all. Last week I was in Washington DC competing at the American Open for weightlifting and what an incredible experience its was. We spent five days lifting weights, sight seeing, bumping into friends and I even had the pleasure of attending a Paleo Cookie Swap hosted by Paleo Parents at their home in Virginia.

I'm very excited to share this post with you because it's my first guest post! And the best part is, she's amazing. I mean, she makes noodles out of vegetables. How great is that? And all, I mean ALL, of her recipes are fantastic. The second best part about this recipe, well besides the fact that it's absolutely delicious, its extremely simple to make. If you've been following me for a while now, you know I'm a big fan of simple and quick recipes. We're all busy, I know that, but your health shouldn't have to go out the window because of it. If you have the right tools and resources eating healthy is easy. My suggestions? Experiment with recipes on the weekends and stock up on fresh meat and vegetables, meal prep on Monday, and keep your cabinet stocked with a variety of oils and spices. You'll always be prepared!

I hope everyone had a great Memorial Day weekend. I was at the NorCal CrossFit Regional competition all weekend competing with my team and it was amazing. It was my first time competing at such a large event as well as my entire teams first time. We learned so much, met so many amazing and inspirational athletes and pushed ourselves to the limit. My sister spent the entire weekend with me and is seriously my biggest fan. I don't know what I would have done without her. She constantly told me how amazing I was, did whatever I needed to do and carried my cooler around for me. She's an up and coming crossfitter herself and I can't wait to see where she goes in this sport. My parents also came out to watch me which was probably the highlight of the weekend for me.

Happy Friday! My favourite day of the week.  Love kicking the weekend off. So I apologise for being on a bit of a dessert spree lately.  I made a lot of these a while back, and as I'm following whole30 right now, I can only dream about these delicious treats. Also, my diet has been a bit boring lately, I'm making large meals on the weekend and eating the same thing all week out of convenience and to keep me on track! SWEET POTATO FRIES AND DIPPING SAUCE

Today was the pound for pound competition at my gym.  We had such a great time.  There were about 25 of us competing and my coach had planned out 6 WODs for us.  We had 3 categories, advanced men, advanced women, open men and open women.  It was mostly to have a friendly competition, but I get pretty competitive!  The comps ran from 7:30am to about 12:30pm so it was a great morning.  I came in first out of the advanced women so I was pretty excited!  But the other girls definitely gave me a run for my money.  Afterwards my coach served us a massive paleo feast, I mean massive!  If you follow me on instagram you probably saw the huge plate of food I destroyed.  He's going to send me some of his recipes to share with you guys because they were amazing.  We had pork tenderloin with cauliflower "fried rice", balsamic roasted asparagus, mushrooms, sweet potato and onions, broccoli salad with onions, bacon, eggs, carrots and mayonnaise, tomato, avocado and cucumber salad, roasted chicken and lamb.  And of course I had to have some of it all!  Apparently he was a chef in his prior to coaching life, and a massive one he must have been.  Tonight's recipe is for a dipping sauce I created to go with sweet potato fries because I've been pretty hooked on them lately.  If you have homemade mayonnaise and homemade ketchup in your fridge already, this recipe isn't to difficult to put together.

BACON WRAPPED EGGS WITH SWEET POTATO HASH

Another recipe from my photo stream, luckily I have some instagram recipes to follow up on as I'm in Melbourne for one more night tonight. And speaking of Melbourne, I had such a great evening tonight. When I finished work I wandered around the city for a couple hours and was amazed by how much I was able to see in such a short period of time. I strolled along Southbank and saw the cutest cafe underneath a bridge, which I will definitely be going to next time I'm here, and got to check out all the awesome graffiti on Hosier Lane and finished up walking down Collins street for some massive window shopping. I ended my evening tour at Crossfit CBD for an ass kicking workout and met some great crossfitters! And when I say ass kicking I'm not joking, their gym is literally on a roof top, so all of their runs begin and end with a run up and down 5 flights of stairs (I'm actually not sure if it's 5, but it's a lot! Maybe more). It's one of those things I'd probably complain about if I had to do it on a regular basis, but I'm actually jealous because if I had to do that as much as they do I'd be fit as! Just saying, don't go telling my coach we need to be running stairs or anything. With that being said, if you're in the CBD you should definitely go check them out. They're very welcoming and a great group of people to train with. They also eat paleo, so what's not to love? Now on to tonights recipe, which is so easy (I know that seems to be a theme with me) but I enjoy easy. And it's also delicious, so win win.

ROASTED RED PEPPER AND EGGPLANT DIP

So I was lucky enough to go visit my family in California last week where the sun is shining down!  And it was my sisters 21st birthday so we had to throw her a proper summer BBQ party.  When I think of BBQ I think of meat, meat and more meat, and luckily there was plenty of that to go around!  But I also think about lots of unpaleo side dishes.  So I really wanted to make something nice and yummy that everyone could enjoy.  That's when I came across Tasty Yummies Eggplant and Roasted Red Pepper Dip.  And who doesn't love a good dip?  So I whipped this up and served with lots of veggies and some more sweet potato chips.  It was a hit!
