TURKEY VEGETABLE SOUP

Happy Saturday, happy weekend, and happy sunshine. I'm enjoying this beautiful weather, but I'm not looking forward to this rain they speak of next week. Well I guess if it's going to cool down again what better way to get through it than with a warm bowl of turkey and veggie soup. I posted a pic on instagram of this soup a couple weeks ago and a lot of people asked for the recipe. Unfortunately this was a "throw whatever's in the fridge in the pot" kind of soup so I'm not too sure what the measurements should be. I'm gonna guestimate for you though, so if anything seems to much or too little try adding or subtracting to your liking. Also, I'm almost a third of the way done with my 21 Day Sugar Detox and going strong. Yesterday I got really sick though and it made things extremely hard. You would think being sick would make it easy, I had no appetite most of the day, but then by the evening I was feeling a bit better and all of a sudden I was starving and had no motivation to cook. I just wanted to grab unhealthy snacks from the cupboard, but I didn't. I baked some chicken and veggies so I didn't have to stand over the stove and monitor anything. So day 6 it is today. Hope you're staying strong as well if you're doing a detox. It will be worth it I promise!

GROUND BEEF STUFFED BELL PEPPERS

Well it was officially day 1 of my 21 Day Sugar Detox and I'm on a high. Can every day be this easy? I have a feeling it won't be! But I'm going to soak up my day 1 accomplishment thats for sure. If you haven't already noticed I love my sweets, so its a difficult one for me to give up. But it also gets me feeling sluggish and I'm ready for a reset. So wish me luck, and join me if you want to kick your sugar and carb cravings too! With that being said I will be trying a lot of new meal recipes so I don't get bored and I keep my hands clear of the sweets. Also, the CrossFit NorCal regions are 15 weeks away and its time to get my body ready to kick butt when we make it. And to look good in the array of outfits my teammates are putting together for us. WHOLLY CAPPELLO'S I'M EATING PASTA

OMG I just ate pasta! And I'll admit I felt a little guilty. I haven't had real pasta in over a year! This is crazy. And possibly the greatest thing since bacon, if I dare say that. So there's this awesome company out of Colorado called Cappello's who sent me samples of the three grain free pastas they carry; fettuccini, gnocchi and lasagne. And I thought, where do I even begin? Is this even going to be any good? I love pasta, and it was a tough one to give up when I went paleo, but it's been over a year now since it's touched my lips and I was content with my life and the lack of pasta within it, or so I thought. But then this happened. I decided to give the fettuccini noodles a whirl first and try a traditional spaghetti and meatball recipe (because I love spaghetti and meatballs). And let me just begin by saying this was so easy to cook. The pasta came shipped to me with a freezer bag to keep them fresh, and then it said to keep them in the fridge, or freeze them if you want to use them later. So I had this box in the fridge and the rest are in the freezer to play with later. I boiled up a little water, popped this package in, and boom, ready in 45 seconds! 45 freaking seconds! How perfect is that?

Well I've been MIA a bit. My apologies. I hadn't even realized how long it had been. And I really don't have an excuse. I've just been adjusting to life back in California...which consists of training for about 3 hours a day, eating and sleeping. I can't really complain.  But I suppose I need to start thinking about what I want to do with my life. Okay that was boring. What else can I tell you. I miss Australia. And summer. At least its been a pretty mild winter here so far. The sun has been shining almost every day since I've been back so thats nice! Anyway, on to the spaghetti squash. If you've cooked this before then I apologise again for boring you, but if you haven't then get excited! Spaghetti squash didn't seem to exist in Australia so I was majorly deprived! Now I'm in heaven. I could eat this every night. So here's how to cook it, and here's a simple turkey marinara sauce to top it off with, but if you have a favorite pasta sauce feel free to try that atop this amazing veggy!

Well my days in Australia are dwindling. Only 3 days left. I'm getting pretty sad. Yesterday my friends from the gym threw me a going away picnic at the Royal Botanic Gardens in Sydney. It was absolutely amazing. There were about 20 of us, and they surprised me by all bringing a dish from my blog! How cool is that?! They're seriously such an awesome group of people and friends and I'm going to miss them so much. That's one thing about crossfit, it's such an awesome community, but it makes leaving that much harder. Hopefully I can convince a few of them to come visit me in California though!

Oh how I love Saturday's and Sydney! There are so many great markets and this morning I met my friend at the Eveleigh Farmer's Markets and got lots of yummy veggies and fresh meat! Then we hit up a raw vegan cafe for a late lunch. I got the lettuce tacos made with a walnut mince, salsa, guacamole and cashew sour cream and she got the raw zucchini lasagne made with minced nuts in a cashew cheese. It was something totally new to the two of us, but really tasty! It was also a beautiful day. The sun is finally starting to show its face more and the weather is warming up. Spring is just around the corner!

BAKED CHICKEN FAJITAS

If you weren't already aware I've started whole30 again.  Yes that's right, I failed the first time around.  I have a major sweet tooth and it got in my way!  It's not going to stop me this time though, I'm determined!  So I'm on day 2, and it's going well, but I'm pretty sure it's going to get harder before it gets easier.  So if you have any tips please let me know!  With that being said, my go to meal this week has been baked chicken fajitas.  I made a huge batch Monday night and have been eating it for lunch with heaps of veggies.  This recipe comes from tasteofhome and it's got tons of flavour and keeps me pretty satisfied.  Also, having it prepared and ready to go has helped me stay on track (but it is only day 2 so I'm not going to get ahead of myself here).  And if you're on instagram we've started a little community using #whole30august so check out that hash tag for tons of whole30 approved meals and recipes.  The community of people posting pics there have some awesome looking food and are totally inspiring!

MOROCCAN CHICKEN STIR FRY

Today's recipe follows on some common themes I've seen arise in my recipes lately, fast and easy.  Tonight I got home from Crossfit at 7:45pm and wanted something quick.  I had chicken in the fridge, but was getting sick of plain chicken and veggies (something I often resort to when I'm in a rush) so I decided I'd try to spice things up a bit.  Best Recipes has a great Moroccan chicken stir fry recipe so I just made a few adjustments to make it paleo friendly and it turned out delicious.  Glad I'll have leftovers for lunch tomorrow!
