These are a nice quick treat. And if you're like me and love raw bars (larabars when I'm in the US and emma and tom's bars when I'm in Australia) then you'll love being able to make them on your own. Also, I've called these "simple" date balls because the ingredients in these ones are what I tend to always have on hand, but feel free to mix it up. You can use any nuts you like, add chocolate, coconut, different dried fruits, honey etc.

Today I spent the day hanging out with crossfitters, eating heaps of paleo food and watching recaps of the olympic weightlifting.  I know I'm weird, but I'm lucky to have weird friends who enjoy doing just the same thing on a Sunday afternoon. And wholly crap! Those women and men are freaking strong! I literally can't even figure out how they can possibly snatch and clean and jerk those weights! I mean some of those girls are tinier than me and lifting more than I can deadlift! It definitely didn't make me feel good about myself. But I still loved every minute of it. One of the desserts I made to share today were these date bars, and everyone loved them (well I assume they did, maybe they lied to make me feel better about myself because the Olympians made me look like I train with feathers on my bar).

Success!  I did a one armed handstand on the kettlebell today.  Just in case you were all hanging on the edge of your seats waiting to hear how I went this morning (which I'm sure you weren't).  But hey, it makes a nice Facebook profile picture haha.  I spent the rest of my day lounging around the house, cooking and watching movies.  Pretty lame for a Saturday, but it was freezing cold in Sydney today!  Not really worth going out.  Can summer get here already!  So todays recipe is something I made last week and adapted from My New Roots (since I'm following whole30 right now I unfortunately can't eat this) but in 25 more days you can bet this will be one of the first things I make again, it's so good!

APRICOT BARS

Today was awesome, literally, winter isn't too bad in Sydney.  It was 20 degrees (celsius, which is like 70 farenheit).  My flatmate and I went down to a cafe for brunch and then took a stroll to the beach.  I'm anxiously awaiting summer though, I can't wait to be sunbaking again!  Then we came home, put on the Olympics, and I tried out some new recipes.  These apricot bars were a recipe from Elana's Pantry that I pinned a while back and have been meaning to try.  They turned out delicious!  Although I don't expect much less from Elana, she's like my idol.  Here's the recipe, they're great to cut up into squares, wrap in plastic and toss in the fridge for snacks on the run.  Enjoy!
