Well it's official, I'm moving back to California. Such a bitter sweet really. I certainly miss my family and friends back home, but I've come to call Australia my second home. I'm going to miss so many people and so many things about this place. Oh man, and I have to live in winter for a whole year! Well I'm currently sitting at the Melbourne airport awaiting my flight back to Sydney and decided to take advantage of the free wifi and post today's recipe (finding free wifi in Australia is rare so I'm taking full advantage). Although it was a quick work trip, it was a very good one. I think I ate a bit more than I normally would, but I find it quite difficult to control myself when there's unlimited amounts of food being served! I managed to stick to paleo though so I'm just going to say I succeeded in...well I'm not really sure what in, being a modern cavewoman I suppose? Seems like that should count for something. Anyway, with that being said, today's recipe is another popular go to for me as it combines a good amount of fat, protein and carbs all in one meal.

Well I've come to a point in my whole30 zone challenge thing I've decided to put myself through that I really need some variety! I love the zucchini pasta so much because it goes great with veggies and any kind of protein, so I decided I needed to come up with a new sauce. Seeing as I wanted to make this zone compliant as well as paleo and Ashley complaint, I went on a hunt for some expert advice. I came across Hey, Joob! and have to say, she's a genius! This sauce is so simple and quick to whip up. Also, if you're following the zone diet, add an apple or some fruit for dessert and you've got yourself a perfect 3 block dinner for 2 people. CHICKEN STUFFED BELL PEPPERS

Today was a good day.  I'll admit planning meals for the whole30 is a bit difficult to get used to, but I'm new at it!  I've been making an extra large dinner so that I have leftovers for lunch the next day and finding that works really well.  It seems like it really comes down to preparation.  Especially breakfast because I like to sleep in, and sometimes that means a less than optimal meal.  So tonight I decided I would make sure that couldn't happen by preparing all the stuff I wanted to have ready for breakfast.  I cooked some chicken and chopped up some veggies, and that way in the morning I can just chuck them in the pan with a couple of eggs and they'll be ready in no time!

So I'm a huge fan of thai food, and I'm literally addicted to pad thai.  When I lived in Bondi for a year with my best friend Melissa we had the most amazing thai restaurant next door to our place called Nina's Ploy Thai and we seriously went every weekend.  It was so bad, but so good!  Luckily I no longer live there because going paleo would have been near impossible.  I've seen a lot of versions of paleo pad thai floating around lately so I thought it was time I gave it a try as well.  Oh, and I'm also not a huge fan of spicy food so feel free to add in some chill if you like!
