Sweet Potato, Quinoa and Mixed Berry Muffins

Sweet Potato, Quinoa and Mixed Berry Muffins

As I was baking away in the kitchen over the weekend making lots of pumpkin and persimmon cookies for Christmas Day, I thought, what healthy treat can I make to kick off the new year? I love cookies and I'm getting pretty good at baking with gluten free flours, so I decided on a healthy breakfast muffin. I typically train in the morning so I'm looking forward to having this as my pre workout boost. Why sweet potato and quinoa? Well, why not? I'd seen a lot of quinoa muffins circling the internet and it seemed like such a great substitute to traditional oatmeal. And I'd been putting pumpkin and persimmon puree in EVERYTHING, so why not try something different with a similar consistency, like pureed sweet potatoes. Plus, I already had both of them cooked and in my fridge thanks to my most recent order from Trifecta.

Healthy Shrimp Stir Fry

Healthy Shrimp Stir Fry

Shrimp is one of my favorite foods. It's easy and quick to cook, it's delicious, and its a great source of lean protein. Recently we had a Black Iron Nutrition challenge for our clients. Who could come up with the best stir fry recipe. And you know me, I'm always up for a challenge that involves food! Also, Trifecta, a company that I get a lot of my premade meals from, just added shrimp to their bulk food options. So when we decided on the stir fry challenge and my Trifecta delivery arrived at the door, I instantly knew what I was going to make.

Pumpkin and Pecan Ice Cream

Pumpkin and Pecan Ice Cream

I tried. I really did. But the overwhelming amount of pumpkin in my face everywhere I went today sucked me in. Call me basic. It's okay. I can't help it. Pumpkin is just so good. I'll admit I'm not much of an Autumn/Winter girl. I love summer! So it's odd that I would be celebrating the change in seasons. But I'm not too upset about it just yet because it's still in the 90s here. And I'm still soaking up every last drop of sunshine. Ice cream felt a bit rebellious too. At least I'm not making pumpkin soup and pumpkin lattes yet. Plus any excuse to try a new flavor of ice cream is always welcome. Enjoy!

S'mores Protein Ice Cream

Did you know that it was National Ice Cream Day this past weekend? Of course I did. If you asked me what my favorite food or dessert was I would say ice cream. It's just so good. I love it. So of course I was busy eating way too much ice cream this weekend and hoarding this recipe. Okay I wasn't hoarding it, I just had a really busy weekend and I'm only now getting around to sharing it with you. But trust me, it was worth the wait.

Zucchini Crust Pizza

Zucchini Crust Pizza

I've had a craving for pizza lately and I wanted to make something that I wouldn't feel guilty eating all of the time with good macros and delicious flavor. I was shopping at the farmers market in Midtown Sacramento last week and they had some really good looking zucchini and I thought that would be fun to use as a vegetable crust base! Most of the zucchini crusts I've seen use cheese to bind it together, but I don't like cheese and I also wanted it to be dairy free. So I played around with a starchy gluten free flour (cassava) and egg whites and it turned out soooo good! I topped it with some asparagus, peppers, spinach and eggs that I bought while I was at the market and bacon of course.

Chicken Enchiladas

Chicken Enchiladas

There's just something about Mexican food. Good Mexican food. I grew up in a small rural town in California with some of the best Mexican restaurants. And I had friends growing up who's families always knew how to cook up a good Mexican feast. From taco trucks on the side of the road to buying tamales at school, Mexican food was a big part of my upbringing. And not much has changed. I still love and crave Mexican food. Tacos, burritos, fajitas, enchiladas; I could go on.

Sweet Potato Latkes with Salmon and Poached Eggs

Sweet Potato Latkes with Salmon and Poached Eggs

I’m currently sitting on a really long flight home from Bali and realized I hadn’t had a chance to share this delicious and super simple recipe with you that I made for brunch a few weeks ago. I try not to be too much a creature of habit when it comes to preparing meals, but I’ll be honest, the majority of my breakfasts include sweet potatoes and eggs in some form. I love them and they provide a good source of carbohydrates and protein each morning before I head to the gym.
