Sweet Potato, Quinoa and Mixed Berry Muffins

As I was baking away in the kitchen over the weekend making lots of pumpkin and persimmon cookies for Christmas Day, I thought, what healthy treat can I make to kick off the new year? I love cookies and I'm getting pretty good at baking with gluten free flours, so I decided on a healthy breakfast muffin. I typically train in the morning so I'm looking forward to having this as my pre workout boost. Why sweet potato and quinoa? Well, why not? I'd seen a lot of quinoa muffins circling the internet and it seemed like such a great substitute to traditional oatmeal. And I'd been putting pumpkin and persimmon puree in EVERYTHING, so why not try something different with a similar consistency, like pureed sweet potatoes. Plus, I already had both of them cooked and in my fridge thanks to my most recent order from Trifecta.

About a year ago, around this time, we decided to have a pumpkin recipe challenge at work with our Black Iron Nutrition clients. I was excited and up for the challenge. I decided I wanted to make a high protein pumpkin bar. We got all kinds of healthy delicious ingredients, and then Krissy and I went to work in the kitchen trying to develop the perfect fall treat. A few hours later and multiple attempts to save whatever it was I was mixing together and throwing in the oven, I decided my creation was a failure and not worthy of sharing with the group.

I'm also going to be totally honest here and admit that I didn't actually prep my own salmon tonight. I've been crazy busy lately and Trifecta System (a premade meal company) has been making a lot of my food for me and it's an absolute lifesaver! They do premade paleo meals, macro friendly meals, vegetarian meals and you can also just order precooked food in bulk. I had some precooked salmon so I decided that tonight would be salmon taco night. If you want to get some precooked salmon for this meal, go for it! Cauliflower Tabouleh Salad

I was grabbing a quick lunch from the Whole Foods salad bar a few weeks ago and they had a salad I hadn't seen before. It was a cauliflower tabouleh. I love trying their salads. One of my favorites is their kale and avocado salad. I wasn't too sure about this one, but I went with it and and grabbed some grilled chicken thighs to go with it. Then I sat down with a kombucha and dug in. And OH MY GOODNESS it was SO GOOD! So much flavor. I think it was all the fresh herbs, the parsley and mint, that gave it such a powerful and delicious flavor. So today, when I looked in my fridge and saw a bag of cauliflower rice, I decided I needed to make it. And if you're wondering what "cauliflower rice" is, it's just the lazy version of chopping up your own cauliflower. And I'll admit, I love it! It's so convenient. I'm always sautéing cauliflower rice to go with my dishes so I love having it on hand. You can find it in the produce section of most grocery stores with the other pre chopped and bagged vegetables.

Oh hey there coffee. I need all of you this morning. I like coffee. A lot. Especially on Monday mornings. We're like best friends. Coffee cheers me up and makes me a better person to be around. So we all win when I drink coffee. How was your Father's Day weekend? It was a beautiful day here! I took my Camero out for a ride along the river. The car that my dad and my grandpa helped me restore 14 years ago (wow time flies! now I feel old now). It seemed fitting for Father's Day though. My dad is the one who got me into classic cars. When I was 15 years old I wanted a brand new mustang. Doesn't every kid want a brand new car on their 16th birthday? I wanted a yellow sports car. Haha, I was dreaming.
