Mint Chocolate Energy Bars

Mint Chocolate Energy Bars

I'm always on the lookout for a good energy bar. Something that has plenty of carbs for a pre or post workout snack and that also tastes good. I can't always stomach a whole meal right before or after I train, but I know I need the carbs to get me through my workout and to help with recovery. Date based bars are my fav and I love RX Bars and Larabars.

Citrus and Mint Vinaigrette with Omega 3

Citrus and Mint Vinaigrette with Omega 3

My friends at PurePharma have been coming out with some pretty awesome products lately, and when I heard that they were launching a liquid Omega 3 I couldn't wait to get my hands on it! I've talked a lot about fish oil in the past. It's one of the supplements I swear by and highly recommend. Most of the nutrients we need to thrive we get easily by consuming a healthy diet. However, heart healthy Omega-3 is often one we lack if we aren’t eating a lot of oily fish. Specifically things like salmon, sardines, anchovies, mackerel or trout. I love salmon and eat it quite often. And f you eat Omega-3 rich foods on a regular basis you may not need a supplement. However, if you don’t, or if you’re an athlete, you may need a little bit more. Omega-3 can help to prevent inflammation, enhance recovery and improve endurance performance. So basically I never miss a dose!

Healthy Shrimp Stir Fry

Healthy Shrimp Stir Fry

Shrimp is one of my favorite foods. It's easy and quick to cook, it's delicious, and its a great source of lean protein. Recently we had a Black Iron Nutrition challenge for our clients. Who could come up with the best stir fry recipe. And you know me, I'm always up for a challenge that involves food! Also, Trifecta, a company that I get a lot of my premade meals from, just added shrimp to their bulk food options. So when we decided on the stir fry challenge and my Trifecta delivery arrived at the door, I instantly knew what I was going to make.

Chicken Shawarma with Grilled Vegetables

Chicken Shawarma with Grilled Vegetables

Spring is officially here and that means its barbecue season! At least in my book. If I can cook it on the barbecue I'm probably going to. Because things just taste better on a grill don't they? I'm also so excited for everything I have coming this spring and summer. Last week my mom, dad and grandma all came over to help work in my yard. It needed a lot of work and every time I went out there I was so overwhelmed. In one day we did what would have taken me weeks. It was fun and the sun was out and now my yard looks great.

My Active Roots: Why the Name Change?

My Active Roots: Why the Name Change?

This has been a long time coming, and it was a tough decision to make. But a necessary one! So, why the new name? Well..things change and people evolve. I guess that's the short and sweet answer. 5 years ago I started this blog as a way to document and share my experiments in the kitchen while exploring the paleo diet. I didn't really know where it was going to go, I just knew I wanted to eat healthy whole foods and I wanted to find a way to make them taste good. Today I still enjoy sharing the same type of recipes, but I've incorporated a whole hell of a lot more into this blog.

G3 Chia Seed Pudding

G3 Chia Seed Pudding

Have you ever made chia seed pudding before? It's one of my favorite things to make. And for many reasons. The first of which...it's delicious! It also has soooo many health benefits. It's packed with omega-3's, protein, antioxidants and fiber (a lot of it)! I work with a lot of nutrition clients who struggle to get enough greens and fiber in their diet, so when PurePharma announced their new product, G3, I couldn't wait to add it to some chia seeds pudding. This recipes packs a healthy punch!! With the addition of G3, which is a greens powder made from spinach, kale and parsley, you're loading up on vitamins and minerals from some of the most nutrient dense leafy greens.

Salmon Tacos with Creamy Chimichurri Sauce

Salmon Tacos with Creamy Chimichurri Sauce

I recently started working for Black Iron Nutrition as a sports nutrition coach and every week we have a recipe challenge. This week was tacos! And since it's Tuesday and I love tacos, I had to participate. Taco Tuesday is literally my favorite day of the week! I'm also going to be totally honest here and admit that I didn't actually prep my own salmon tonight. I've been crazy busy lately and Trifecta System (a premade meal company) has been making a lot of my food for me and it's an absolute lifesaver! They do premade paleo meals, macro friendly meals, vegetarian meals and you can also just order precooked food in bulk. I had some precooked salmon so I decided that tonight would be salmon taco night. If you want to get some precooked salmon for this meal, go for it! I've also included a simple recipe for salmon below as well.

Cauliflower Tabouleh Salad

Cauliflower Tabouleh Salad

I was grabbing a quick lunch from the Whole Foods salad bar a few weeks ago and they had a salad I hadn't seen before. It was a cauliflower tabouleh. I love trying their salads. One of my favorites is their kale and avocado salad. I wasn't too sure about this one, but I went with it and and grabbed some grilled chicken thighs to go with it. Then I sat down with a kombucha and dug in. And OH MY GOODNESS it was SO GOOD! So much flavor. I think it was all the fresh herbs, the parsley and mint, that gave it such a powerful and delicious flavor. So today, when I looked in my fridge and saw a bag of cauliflower rice, I decided I needed to make it. And if you're wondering what "cauliflower rice" is, it's just the lazy version of chopping up your own cauliflower. And I'll admit, I love it! It's so convenient. I'm always sautéing cauliflower rice to go with my dishes so I love having it on hand. You can find it in the produce section of most grocery stores with the other pre chopped and bagged vegetables.

Pumpkin and Pecan Ice Cream

Pumpkin and Pecan Ice Cream

I tried. I really did. But the overwhelming amount of pumpkin in my face everywhere I went today sucked me in. Call me basic. It's okay. I can't help it. Pumpkin is just so good. I'll admit I'm not much of an Autumn/Winter girl. I love summer! So it's odd that I would be celebrating the change in seasons. But I'm not too upset about it just yet because it's still in the 90s here. And I'm still soaking up every last drop of sunshine. Ice cream felt a bit rebellious too. At least I'm not making pumpkin soup and pumpkin lattes yet. Plus any excuse to try a new flavor of ice cream is always welcome. Enjoy!
